Pasteurised cow's milk comes from a specified area in North-Holland that was originally sea. The salt still prevalent in the soil adds to the flavour of the milk and these traditional Goudas are considered the best even in the Netherlands.

The Arina factory in Rijhe collects goat's milk from 40 farmers in the South of the Netherlands.
Both its flavor and texture are unlike the tart, fresh chèvre most people are more familiar with.

This creamy young gouda is well-balanced with the subtle flavour of cumin seeds. Extremely popular with the Dutch and this North Holland version is probably the best example. There is also a stronger Matured 'Kanter' style.
We also have Gouda with Chilli, Nettle, or Mustard seed.

Maasdammer Tilbury is a fine example of the classic 'Gatenkaas' (holey cheese)- an excellent sandwich or fondue cheese. And a good alternative to Emmental or Comte. We now generally stock Stolwijke, an unpasteurised farmer's version with even more flavour.

This popular variety is extra ripened and features a pleasantly piquant flavor and solid consistency. The fine, yet visible salt and protein crystals mark its perfectly aged qualities and exclusive character. When finely grated, it works outstandingly well in Mediterranean dishes. Prima Donna maturo is lactose and gluten free.
